Roast sweet potato
- Cut the sweet potato into slices about 1-1.5 cm thick and brush with a little olive oil.
- Airfryer: Roast for 14-17 minutes at 200 °C until golden brown on the outside and soft on the inside.Oven alternative: 200 °C fan oven, 20-25 minutes on a baking tray (turn halfway through).
Prepare the beetroot cream
- Meanwhile, place all the ingredients in a blender or tall container and blend until smooth. Flavour with spices. The cream will be wonderfully creamy and is great for spreading on toast.Cut the avocado into thin slices.
Garnish & enjoy
- Spread the warm sweet potato toasts generously with beetroot cream, top with avocado and add salt, pepper or chilli flakes to taste. Your healthy power snack is ready! Enjoy to the fully fullest!
