It is best to soak the cashews and dates overnight in a bowl of water. Then rinse them well with fresh water.
Chocolate filling
Place the cashews, dates, coconut milk and cocoa powder in a blender and mix everything well to create a creamy mixture.
Then, fill your popsicle moulds with the mixture, put the sticks in and place in the freezer for approx. 4 hours.
Chocolate icing
For the chocolate icing, mix your liquid coconut oil with the remaining cocoa powder, mix well and add the chopped almonds.
After approximately 4 hours, your ice cream should be frozen. Dip them individually into your chocolate-almond mixture and leave them to set on a small grid. As the ice cream is frozen, the icing will set very quickly. As always: Enjoy to the fully fullest!
