Vegan Chocolate Popsicles like Magnum Recipe

I have to admit that I don’t know whether it was such a good idea to create this recipe… This vegan chocolate ice cream on a stick is really the devil’s plaything. To be honest, it has turned out a little too delicious. But the good thing is that it’s completely sugar-free, as I only sweeten it with dates. This keeps the “guilty conscience” to a minimum. And as long as you don’t devour 3, 4 or 5 of them in a row, you can chill.

It’s super easy to prepare, you just need a blender. Plus, I recommend soaking the cashews and dates the night before. I’ll tell you why it makes sense to soak the cashews beforehand and rinse them well in my recipe for “Easy Coconut Popsicles”. So, here we go! And first of all: the ice cream tastes best either straight after icing or – I know it’s challenging to pull yourself together – thawed for 5–10 minutes. Then the chocolate icing breaks in your mouth and the chocolate centre is soft. Divine! Thank me later.

Equipment

  • 2 bowls
  • 1 blender
  • 1 popsicle mould approx. 10 popsicles
  • 1 small grid optional

Ingredients

Filling

  • 100 g cashews soaked overnight
  • 10 dates pitted, soaked overnight
  • 400 ml coconut milk
  • 40 g cocoa powder

Frosting

  • 20 g coconut oil liquid
  • 40 g cocoa powder
  • 50 g almonds chopped

Instructions

Preparation the evening before

  • It is best to soak the cashews and dates overnight in a bowl of water. Then rinse them well with fresh water.

Chocolate filling

  • Place the cashews, dates, coconut milk and cocoa powder in a blender and mix everything well to create a creamy mixture.
  • Then, fill your popsicle moulds with the mixture, put the sticks in and place in the freezer for approx. 4 hours.

Chocolate icing

  • For the chocolate icing, mix your liquid coconut oil with the remaining cocoa powder, mix well and add the chopped almonds.
  • After approximately 4 hours, your ice cream should be frozen. Dip them individually into your chocolate-almond mixture and leave them to set on a small grid. As the ice cream is frozen, the icing will set very quickly. As always: Enjoy to the fully fullest!

No sugar needed – so much healthier than bought ones!

My jaw dropped when I looked at the list of ingredients for vegan Magnum! “Ingredients: Water, sugar, cocoa butter, cocoa mass, glucose syrup, ALMONDS, coconut fat, fructose, glucose-fructose syrup, (…)” – among the first 9 ingredients alone, you will find 4 times sugar or sugar in disguise! What a shame and so unnecessary! Since you won’t need that at all when you make these chocolate popsicles by yourself! It’s enough to use the sweetness of dates and if it’s not sweet enough for you, just use 2-3 more dates. So easy!

Did you know that “date sugar” is not “real” sugar? Date sugar only consists of dried, ground dates and is not just extracted sugar like date syrup, for example! Date sugar is therefore simply dried, ground dates. Hence, it is very rich in nutrients and far from “empty calories!” And if you want to add some protein to the ice cream, you can simply mix some protein powder into the filling! Of course, I only use our sugar-free raw cocoa from Dein Kakao “hundert pro” (self-promotion). You can also use a different cocoa powder. It just won’t be as flavoursome.

Try something new!

One of the reasons why I was so excited about and looking forward to the ice cream was the fact that my new blender arrived! As my old one literally “died”, I had to get a new one and so far it hasn’t let me down! I got myself the „VitaBoost Bosch“* as it was important to me to be able to make my own nut butter. I also use this silicone mould for ice cream sticks for up to 12 pieces*.

Alternatively, you can use the popsicle mould to make chia and turmeric ice cream, which has even made it into World Vegan Magazine! If turmeric is too spicy for you, I also have a recipe for chia almond ice cream or chocolate protein ice cream. You can also easily make your own hot chocolate on a stick.
