Sweet potato 🍠 toast with avocado 🥑 & beetroot cream recipe – vegan, healthy & gluten-free
If you’re looking for a quick, nutritious and simply delicious recipe that doesn’t require any bread, then you’ll love these sweet potato toasts with avocado and creamy beetroot cream. Not only are they vegan and gluten-free, they are also packed with vitamins, fibre and flavour.
The roasted sweet potato slices form the perfect base – crispy on the outside, soft on the inside. On top is my velvety, slightly earthy beetroot cream and fresh avocado. Simple, colourful and so filling – ideal as a breakfast, healthy snack or light supper!

Equipment
- 1 brush
- 1 Airfryer
- 1 blender
Ingredients
- 1 big sweet potato ca. 400 g
- ½ tbsp olive oil or melted coconut oil
- 1 avocado ripe
Beetroot Spread
- 1 beetroot pre-boiled
- 100 g white beans drained & washed
- ½ clove garlic optional
- 1 tbsp tahini
- 1 tbsp juice
- 1 tsp olive oil
- 1 tsp nutritional yeast optional
- salt, pepper, ground coriander according to taste
Instructions
Roast sweet potato
- Cut the sweet potato into slices about 1-1.5 cm thick and brush with a little olive oil.
- Airfryer: Roast for 14-17 minutes at 200 °C until golden brown on the outside and soft on the inside.Oven alternative: 200 °C fan oven, 20-25 minutes on a baking tray (turn halfway through).
Prepare the beetroot cream
- Meanwhile, place all the ingredients in a blender or tall container and blend until smooth. Flavour with spices. The cream will be wonderfully creamy and is great for spreading on toast.Cut the avocado into thin slices.
Garnish & enjoy
- Spread the warm sweet potato toasts generously with beetroot cream, top with avocado and add salt, pepper or chilli flakes to taste. Your healthy power snack is ready! Enjoy to the fully fullest!

How much vitamin A is really in sweet potatoes?
You may have read that one sweet potato can provide up to 400% of your daily vitamin A requirement – and yes, that’s true! Depending on the variety and size, 130-150 g of sweet potato can even provide up to 1,400 µg of retinol equivalents – that’s more than 150 % of the recommended daily amount according to the US reference values (DV).
In Europe, the recommended reference value for adults is 800 µg of vitamin A per day (EU-NRV). Since this recipe with a large sweet potato (approx. 400 g) makes 4 toasts, a single toast contains about 100 g of sweet potato – i.e. approx. 709 µg of vitamin A.
➔ This corresponds to approx:
- ~89% of the daily requirement according to EU reference values (NRV)
- ~79% of the daily requirement according to US guidelines (DV of 900 µg)
So with just one toast, you already cover around three-quarters of your daily requirement – with two you are easily at 150%! 🎉

Why is vitamin A so important for you? 🧡
Vitamin A is a real all-rounder for your health. It:
- supports healthy vision, especially in the dark,
- promotes cell renewal and regeneration,
- strengthens your immune system and has an antioxidant effect,
- and helps to maintain healthy skin and mucous membranes.
An adequate supply of vitamin A can be particularly valuable in the winter months or when you spend a lot of time in front of a screen – and how nice when it’s also so tasty! Taken in the form of beta-carotene – your body can convert this into the active form if required. And as the recipe contains good fats (e.g. from avocado & olive oil), the fat-soluble vitamin is also optimally absorbed! Sounds like an absolute win-win situation! 😎
Meal prep & enjoyment tips 🤤
- You can pre-bake the sweet potato slices in the evening and simply toast or warm them up in the morning – perfect for a stress-free morning! 🧘🏽♂️
- The beetroot cream can be stored in an airtight container in the fridge for 2-3 days. It also goes perfectly with baked vegetables – e.g. my recipe for roasted Brussels sprouts! 💪🏼
- If you like beetroot: replace it with a pea cream – then it’ll be really green! 🌱💚
