Vegan, protein-rich and gluten-free hazelnut chocolate tart without baking!
If you fancy a decadent chocolate treat that doesn’t require any baking, then this raw hazelnut chocolate tart is just the thing for you! It combines nutty flavours with a creamy chocolate glaze and is packed with healthy ingredients. Let’s go!

Equipment

- 1 tart tin Ø 28 cm
Ingredients
base
- 250 g hazelnut flour
- 50 g cocoa powder
- 80 g date sugar
- 1 pinch vanilla
- 1 pinch salt
- 150 g peanut butter
- 170 ml soya milk
peanut-filling
- 50 g peanut butter
- 30 g coconut oil
- 20 g date sugar optional xylitol
chocolate frosting
- 170 ml coconut milk full fat
- 50 g cocoa powder
- 1 pinch vanilla
decor
- 30 g hazelnuts best: blanched, roasted
Instructions
Perpare the base
- Firstly, mix the hazelnut flour, cocoa powder, date sugar, vanilla and salt in a bowl
- Then add the peanut butter and soya milk and work into a smooth, slightly sticky dough.
- Press the dough into your tart tin and spread evenly. Make sure to raise a small edge. Leave to set in the fridge while you prepare the filling.
Prepare peanut-filling
- Heat the coconut oil and mix with the peanut butter and date sugar until the mixture becomes creamy.
- Pour the filling onto the chilled base and smooth it out. Place back in the fridge for approx. 20 mins, so that the filling sets.
Prepare chocolate frosting
- Mix the coconut milk, cocoa powder and vanilla well until you have a creamy icing. This works particularly well with a small whisk.
- Pour the icing evenly over the firm peanut filling and decorate with chopped hazelnuts or cocoa nibs if desired. Chill again for at least 3 hours until the icing is firm to the touch. As always: Enjoy to the fully fullest!

Why these ingredients?
Unsweetened peanut butter instead of regular peanut butter: Unsweetened peanut butter is the more natural option as it consists only of ground peanuts – without additives such as sugar or palm oil. Perfect for a clean snack!
Date sugar instead of industrial sugar: Date sugar is made from 100% dried and ground dates. Unlike industrial sugar, it contains fibre, minerals and antioxidants – a real superfood that slows down the rise in blood sugar.
Soya milk for firmness: Soya beans naturally contain lecithin, an emulsifier that supports the mixture of fat (e.g. from peanut butter or coconut oil) and water (from soya milk). Lecithin ensures that the consistency remains smooth and that the ingredients combine well. This is particularly important for the moist but compact structure of the base – especially in a RAW cake.
Weakly de-oiled cocoa is more full-bodied than strongly de-oiled cocoa because it contains more cocoa butter (approx. 20-22% instead of 5-10%) and therefore:
- More intense flavour: it retains the full, natural chocolate flavour.
- Better consistency: the higher amount of fat ensures creamier icings and creamier masses.
- More nutrients: e.g. antioxidants, which are partially lost during strong de-oiling.
So it’s ideal for recipes like my tart, where the full chocolate flavour is required! Of course, I only use your cocoa products (self-promotion): Organic cocoa powder*, organic hazelnut flour*, organic date sugar*.

Hazelnut chocolate tart without industrial sugar, vegan, gluten-free and high in protein
