Breakfast bowl with black sticky rice, raspberries and figs
If you’re looking for a healthy and colourful breakfast bowl that will keep you satiated for a long time and provide you with a good portion of antioxidants at the same time, then this breakfast bowl with black sticky rice, fresh raspberries and figs is just the thing! Since antioxidants boost your immune system, they are never a bad thing, especially in autumn! Black sticky rice not only gives your bowl a spectacular colour, but also brings lots of valuable nutrients to the table. Together with fresh fruit, this breakfast is a little highlight to start the day.

Ingredients
- 150 g black sticky rice
- 400 ml coconut milk
- 150 ml water optional
- 20 g cacao powder
- 2 tbsp date sugar optional
Topping
- 100 g plant-based yoghurt
- 100 g raspberries
- 3 figs
- 20 g cacao nibs
- 50 g granola
- some fresh mint
Instructions
Preparing the rice
- Firstly, you should wash the rice thoroughly in a sieve and then leave it to soak in a bowl covered with water for at least 30 minutes.
- Wash the rice again thoroughly under clean water.
Preparation
- Wash the sticky rice thoroughly in a sieve until the water runs clear. Place the rice, coconut milk and water in a pan and boil while stirring. Then reduce the heat and simmer for about 35–40 minutes until the rice is soft, and the liquid is almost completely absorbed. Stir regularly to prevent the rice from burning.
- Stir the cocoa powder and date sugar into the warm rice so that the sweetness is well distributed. Leave the rice to stand for 5 minutes.
- Divide the warm or slightly cooled rice between two bowls. Add the soya yoghurt to the side and decorate with fresh raspberries and fig slices. Sprinkle the muesli and cocoa nibs evenly over the bowls. Serve the breakfast bowl fresh and ideally spoon it up straight away – the mixture of warm rice and fresh, crunchy toppings is irresistible! Tips for your perfect breakfast bowl
- Black sticky rice: It has a slightly nuttier and stronger flavour than normal rice. Additionally, it has a great, almost purple-black colour that makes your bowl look and taste special. I tell you more about black rice in the blog post “Black vs. white rice – which is better?”
- Vary the toppings: If you don’t like figs or don’t have any at home, try banana slices, pomegranate seeds or blueberries as an alternative.
- Meal prep: Soak your black rice in water the evening before. You should definitely do this to flush out carcinogenic arsenic. Plus, you can prepare the sticky rice the night before and keep it in the fridge overnight. This way, you have a quick breakfast in the morning you only need to add fresh toppings to.
- Extra crunch: For a little more bite, you can roughly chop a few nuts such as almonds or walnuts and sprinkle them over the bowl as an additional topping.
